This ‘journey across the Indian Ocean’ is a day of forging through the Australian coastline bordering the Indian Ocean for native ingredients such as samphire, sea parsley, lilly pillies, quandong & pigface.
The Great Migration
Of the several islands in the Indian Ocean, Christmas Island has forever been known for the incredible red crab migration. The migration starts with the first rainfall of the wet season as the crabs graciously (sometimes notoriously) make their way from the land to the ocean for mating. 
This natural process is ought to be a memory from ‘a journey across the Indian Ocean’ one cannot fail to forget.

The bounty that the Indian Ocean is, is only gauged by the produce it bestows on humankind. Every holiday we take, every journey we make is remembered through our senses; food/eating being one activity that uses all human senses. Thus, no ‘journey across the Indian Ocean’ is complete without memories of food-the catch of the day, served with fresh and native herbs, on banana leaves finished with the undeniable staple of any coast, the coconut!
